teezeCrost Did Some Real Food Prep Last Night!
What follows isn’t vegan, but perhaps it’s still good enough to finally get me on TIFS, The Internet’s Favorite Site (http://xbeepsx.blogspot.com/)!
I like to cook, but I can’t remember the last time I made time for a dish that required any level of effort. Well, I made it happen last night, and I must say I’m pleased with the results!

The waistline has had me somewhat displeased in recent days, so I’ve been making a real effort the past few weeks to eat healthy. I’ve never in my life had abs worth mentioning, and with my 30th birthday fast approaching, I’ve realized that it’s now or probably never. I don’t know why, but I want to have had washboard abs at some point in my life before I die, and it’s not going to get any easier as time goes by.
Anyway, on with last night’s supper. I started by making a whole wheat, black lentil crust from scratch. Kneeding the dough for this took more effort than I expected, and was actually pretty good exercise! Next, I made the sauce out of reduced fat Ricotta cheese and garlic that I roasted on the BBQ. I then grilled up some chicken breasts on the BBQ, chopped them up, and tossed them on the pie along with some onions, mushrooms, green peppers, and a bit of grated marble cheddar. Ten minutes and a dash of salt and pepper later, I was enjoying the fruits of my labor. I won’t pretend that this tasted like a regular pizza, but it was goddamn good, and there’s something about things that taste healthy that’s somehow satisfying!
